Update: I'm going to use Windows Server 2008 R2 for my home server
After a lot of thought and suggestions from all of you, I've decided to beef up my old machine a bit and use Windows Server 2008 R2. I was able to obtain a copy of this at a discount, so it makes more sense. Also, it's nice having the version with all of the features... I guess I'm a "just in case" type of guy.
This is going to be quite a project, and if I can get my hands on Microsoft Exchange 2010, I might put it on there too. It'll be nice to play around with this and host my own Exchange server too. I'll keep you all updated.

I really need to get on the ball and learn server 2008. Still running SBS 2003 here

So you ended up deciding on creating your server. Smart choice mate. Also, good idea on beefing up your machine because thats going to be vital for what your planning on doing.

When I went to the MS developers conference last September, they were giving out free copies of Exchange and Windows 7 Professional. Yea, I was using the beta of 7, but it was awesome that I got a 64bit version of Pro. HAven't looked back yet since I was using XP.
Lol I get this software for free...It feels good mang being a Computer Engineer.

Nice, would've personally gone with Debian or something similar, but that's a good choice too.
If you plan on installing Exchange, I recommend you go with Windows Small Business Server 2008.
